Ingredients
- 1 cup(s) Blu gourmet pearl couscous
- 2 tablespoon(s)s extra virgin olive oil
- 1/2 brown onion (chopped)
- 1 strip(s) bacon (finely diced)
- 1 & 1/2 cup(s)s Stock
- 1 cup(s) green peas
- 3 tablespoon(s)s finely grated parmesan cheese
- 1 teaspoon(s) butter (optional)
- 4 tablespoon(s)s parsley (chopped)
Directions
- Pour olive oil into a non-stick pan over medium heat.
- Add chopped onion and bacon and, while stirring, cook for 2-3 minutes without browning.
- Add stock or water and bring to the boil. Stir in pearl couscous and seasonings.
- Bring to a simmer, add peas, cover pan and cook for 8-10 minutes, adding a little boiling water from a kettle if a bit dry.
- When it’s cooked the stock will have been absorbed.
- Stir in the parmesan, the butter, the parsley and the garlic and serve.
