This is quicker and easier to make than truffle balls, and not as messy. It will store well for up to a week in the refrigerator. It is a delicate treat in hot weather.

The enchiladas can be prepared in advance, stored in the refrigerator and cooked in the oven when required. You will need 4 oblong oven proof dishes (approximately 24 cm x 15 cm)
