Ingredients
- ½ cup(s) finely chopped onion
- 1 ½ cup(s) diced chicken
- 1 ½ cup(s) Blu Gourmet Pearl Couscous
- 1 carrot finely chopped
- 1 capsicum chopped
- 1 cup(s) pumpkin chopped
- ½ cup(s) chopped green beans
- 1 ½ cups boiling water or hot liquid stock – chicken or vegetable
- 2 teaspoon(s)s Moroccan spices
- 1 tablespoon(s) chopped preserved lemon
- Zest of one lemon
- Juice of half a lemon
- Salt and pepper
Directions
Put a tablespoon of olive oil in a saucepan and cook chicken with Moroccan spices until slightly golden. Add the onion, couscous, carrot, capsicum, beans and pumpkin and stir for about 1 minute. Add liquid stock or boiling water, and allow it to cook with the lid on for 8-10 minutes. Mix through preserved lemon, lemon juice, zest, season and serve.
**Chicken may be replaced with gourmet sausages, or chorizo.
