Moroccan chicken

Ingredients

  • ½ cup(s) finely chopped onion
  • 1 ½ cup(s) diced chicken
  • 1 ½ cup(s) Blu Gourmet Pearl Couscous
  • 1 carrot finely chopped
  • 1 capsicum chopped
  • 1 cup(s) pumpkin chopped
  • ½ cup(s) chopped green beans
  • 1 ½ cups boiling water or hot liquid stock – chicken or vegetable
  • 2 teaspoon(s)s Moroccan spices
  • 1 tablespoon(s) chopped preserved lemon
  • Zest of one lemon
  • Juice of half a lemon
  • Salt and pepper

Directions

Put a tablespoon of olive oil in a saucepan and cook chicken with Moroccan spices until slightly golden. Add the onion, couscous, carrot, capsicum, beans and pumpkin and stir for about 1 minute. Add liquid stock or boiling water, and allow it to cook with the lid on for 8-10 minutes. Mix through preserved lemon, lemon juice, zest, season and serve.

**Chicken may be replaced with gourmet sausages, or chorizo.
