1 Pour olive oil into a non-stick pan over medium heat.
Add chopped onion and bacon and, while stirring, cook for 2-3 minutes without browning.
2Add stock or water and bring to the boil. Stir in pearl couscous and seasonings.
Bring to a simmer, add peas, cover pan and cook for 8-10 minutes, adding a little boiling water from a kettle if a bit dry.
3When it’s cooked the stock will have been absorbed.
Stir in the parmesan, the butter, the parsley and the garlic and serve.
