Ingredients
  • ½ cup finely chopped onion
  • 1 ½ cups diced chicken
  • 250gm packet Blu Gourmet Pearl Couscous
  • 1 carrot finely chopped
  • 1 cup chopped green beans
  • 1 ½ cups boiling water or hot liquid stock – chicken or vegetable
  • 2 teaspoons Szechuan Spices
  • Salt and pepper
  • 1 Put a tablespoon of olive oil with Szechuan spices in a saucepan and heat gently.
  • 2Add chicken to spices and cook until half cooked.
  • 3Add the onion, couscous, carrot, and green beans and stir for about 1 minute. Add liquid stock or boiling water, and allow it to simmer with the lid on for 8-10 minutes.
  • 4Season with salt and pepper and serve.
