500ml boiling water or liquid stock chicken or vegetable
½ bunch chopped fresh coriander leaves

Add 1 tablespoon olive oil to saucepan, then add garlic, onion and sauté.
Add curry powder, carrot, capsicum, beans, pumpkin, couscous and stir fry for 1 minute.
(This starts the cooking process in vegetables and enhances the curry flavour – You can
substitute some of the vegies with whatever veggies you like).
2Add liquid stock or boiling water, season according to taste and simmer with the lid on for 8-10 minutes.
3 Sprinkle the coriander leaves over the couscous and serve.
