  • ½ cup finely chopped onion
  • 1 teaspoon garlic crushed
  • 1 carrot finely chopped
  • 1 capsicum chopped
  • ½ cup beans chopped
  • ¾ cup pumpkin chopped
  • 1 teaspoon curry powder
  • 250gm Blu Gourmet Pearl Couscous
  • 500ml boiling water or liquid stock chicken or vegetable
  • ½ bunch chopped fresh coriander leaves
  • Salt and pepper
  • 1 Add 1 tablespoon olive oil to saucepan, then add garlic, onion and sauté. Add curry powder, carrot, capsicum, beans, pumpkin, couscous and stir fry for 1 minute. (This starts the cooking process in vegetables and enhances the curry flavour – You can substitute some of the vegies with whatever veggies you like).
  • 2Add liquid stock or boiling water, season according to taste and simmer with the lid on for 8-10 minutes.
  • 3 Sprinkle the coriander leaves over the couscous and serve.
