Ingredients
  • 250 g Blu Gourmet Pearl Couscous
  • 500 ml Water
  • 4 tbsp Olive oil
  • 20 g Butter
  • 350 g Fish fillet of your choice
  • 1 Juice of a lemon
  • ¼ Red onion (finely diced)
  • 2 Tomatoes (seeded & finely diced)
  • ½ cup Cucumber (seeded, peeled & sliced)
  • 2 tbsp Dill (finely cut)
  • 1 Pinch black pepper (freshly ground)
  • 1Bring 500ml salted water to a simmer. Stir in the couscous, cover with a lid and cook the couscous for 10 minutes. Make sure all the water is absorbed. Stir in 1 tbsp olive oil and the butter.
  • 2While the couscous is cooking, cook the fish fillets in an oiled non-stick pan for a few minutes on each side.
  • 3In a bowl mix the lemon juice with a little salt and pepper and the remaining olive oil. Add the diced red onion and tomatoes, diced cucumber and the dill and mix well.
  • 4Serve a little couscous on three plates. Top with a piece of fish, spoon a little salsa over the fish and serve immediately.
